Garbanzo Bean and Sweet Potato Salad

I first tried a version of this refreshing cilantro-lime salad from a friend who brought it to a party I hosted. It’s now become a staple in our diet since it’s soooo good, fast and easy to make.

Garbanzo Bean and Sweet Potato Salad

A refreshing salad packed with protein, nutrients and flavonoids

Ingredients

  • 2 cans Garbanzo Beans or Chickpeas
  • 1 Sweet Potato
  • 1 Cucumber (peeled)
  • 1 Red Bell Pepper
  • 1 Orange or Yellow Bell Pepper
  • 3 tbsp Fresh Red Onion (minced)
  • 1/4 cup Chopped Fresh Cilantro
  • 2 Limes
  • 1 /2 Lemon
  • 1/3 cup Extra Virgin Olive Oil
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  • Peel the sweet potato and chop into 1 inch cubes.
  • Steam the sweet potato cubes for 8 minutes or until tender, then transfer to an ice bath.
  • Chop the cucumber and bell peppers into bite size pieces.
  • Combine the cucumber, bell peppers, garbanzo beans, cilantro and minced red onion in a large bowl.
  • In a small bowl, juice the limes and lemon. Whisk in the olive oil, salt, black pepper and garlic powder. Pour over the vegetable mixture and mix well.
  • Remove the sweet potatoes from the ice bath and fold into the vegetable mixture.
  • Chill for 30 minutes.
