Ingredients
2cansGarbanzo Beans or Chickpeas
1Sweet Potato
1Cucumber (peeled)
1Red Bell Pepper
1Orange or Yellow Bell Pepper
3tbspFresh Red Onion (minced)
1/4cupChopped Fresh Cilantro
2Limes
1 /2Lemon
1/3cupExtra Virgin Olive Oil
1/4tspGarlic Powder
1/2tspSalt
1/4tspBlack Pepper
Instructions
Peel the sweet potato and chop into 1 inch cubes.
Steam the sweet potato cubes for 8 minutes or until tender, then transfer to an ice bath.
Chop the cucumber and bell peppers into bite size pieces.
Combine the cucumber, bell peppers, garbanzo beans, cilantro and minced red onion in a large bowl.
In a small bowl, juice the limes and lemon. Whisk in the olive oil, salt, black pepper and garlic powder. Pour over the vegetable mixture and mix well.
Remove the sweet potatoes from the ice bath and fold into the vegetable mixture.
