I first tried a version of this refreshing cilantro-lime salad from a friend who brought it to a party I hosted. It’s now become a staple in our diet since it’s soooo good, fast and easy to make.

Garbanzo Bean and Sweet Potato Salad
A refreshing salad packed with protein, nutrients and flavonoids

Ingredients
- 2 cans Garbanzo Beans or Chickpeas
- 1 Sweet Potato
- 1 Cucumber (peeled)
- 1 Red Bell Pepper
- 1 Orange or Yellow Bell Pepper
- 3 tbsp Fresh Red Onion (minced)
- 1/4 cup Chopped Fresh Cilantro
- 2 Limes
- 1 /2 Lemon
- 1/3 cup Extra Virgin Olive Oil
- 1/4 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Peel the sweet potato and chop into 1 inch cubes.
- Steam the sweet potato cubes for 8 minutes or until tender, then transfer to an ice bath.
- Chop the cucumber and bell peppers into bite size pieces.
- Combine the cucumber, bell peppers, garbanzo beans, cilantro and minced red onion in a large bowl.
- In a small bowl, juice the limes and lemon. Whisk in the olive oil, salt, black pepper and garlic powder. Pour over the vegetable mixture and mix well.
- Remove the sweet potatoes from the ice bath and fold into the vegetable mixture.
- Chill for 30 minutes.
